It had been ages since I had baked cookies. My son had to take something for his class party on the last day of school. He had to leave home at 8 a.m and us at 9.30 a.m. for the PTM. No Cakes- Anirudh was 'bored' of giving cakes to his friends. Yeah, my heart wept :-((. After some indecision I decided that cookies would be the best option. I could make them the previous day - no rush in the mornings and most kids would like to eat them. And if the cookies went wrong, I still would have time to make something else. I had baked cookies once or twice with no extra-ordinary results. So I bravely decided to bake some Egg less Cookies which were calling out to me since ages from Mallika's blog. We had earlier exchanged phone numbers and I set about baking the cookies, confident that I could call the Cookie Expert in case of an emergency.

Dry Ingredients:
1 1/2 cups all purpose flour (200 g)
1/2 tsp baking powder
1/4 cup brown sugar (50 gm)
1/4 cup white sugar (50 gm)
A pinch of salt
Wet Ingredients:
1/2 cup unsalted cold butter (100 g)
1/2 tbsp ground flax seeds
1 tbsp warm water
1 tsp vanilla extract
Add-ons:
1 cup semi-sweet chocolate chips (100 g)
First grind the flax seeds with warm water till they become a mushy egg-like paste. Set aside for later use.
Mix in all the dry ingredients from the list above in a mixing bowl. Add in cold butter. Using your fingers, work the flour–sugar mixture into butter until dough resembles breadcrumbs.
Next, add the ground flax meal paste along with vanilla extract to this. Fold in gently. Add the chocolate chips. Knead gently to form a smooth dough. The dough refused to become smooth and still resembled bread crumbs.. HELP!!!! I wanted to call Mallika and ask her, but realized that I had not saved her number:-((. I added a little bit of milk, just enough to get the dough together.
Chill in fridge if necessary. ( I did not). Shape the cookies to rounds and flatten them a little. Place them on the baking tray and bake them a 180 deg C for about 10-15 minutes or till they brown. Remove and allow to cool before serving.
Was not very sure what was the test the cookies had to pass. I baked them till they were lightly browned at the edges. The first batch was melt-in-the-mouth crisp and yumm... The cookies would taste much better with a lil more sugar I thought.( may be cookies taste less sweet when warm??) Thought I will experiment by adding some cashew nut praline to the next batch. The next couple of batches of cookies looked crumbly on top, but had browned at the edges. Thought I will let them bake for a couple of minutes more. The cookies cooled on the wire rack and then went into a box, ready to go to school.
The cookies tasted just great, but relatively a wee bit harder the next day. Wonder if it was the addition of milk and the praline?? Or maybe I did not knead enough?? Am waiting for help:-))

Suma, Looks good. I hope all the kids enjoyed them too. Cookies usually come out better if you cream butter with sugar than using cold butter. Cold butter is mainly of great importance when it comes to pies, tarts and scones. Try creaming the butter and sugar till fluffy and then add the flax seed mixture, beat well and then incorporate the dry ingredients. You might get surprisingly different texture. It will hold the air pockets so that they don't go hard the next day. Also, if serving later, it is best to remove them 2 - 3minutes before they start browning. Sorry I am typing a lengthy one . I love Cookies too and I always make them eggless.I have no problem adding eggs to Cakes but when it comes to cookies I prefer eggless ones.Looks great!!
Thanks a ton Suma. I baked for the first time in my life today in the microwave (have never ever used the convection mode till date) and I am soo glad for having tried your recipe. It came out well ... Am so happy that I just forgot about the calories and gobbled a whole lot of cookies. Only change to your recipe, I used cocoa powder and ground a Cadbury chocolate along with little water and flax seeds. Was so worried since I cud not make out when the cookies turn brown ! End result was a good one. Waiting to try the eggless cake next. Thanks for introducing me to this world of eggless microwave baking.
