completely am with you on this Arch! This true blue Bangalorean in
Ahmedabad realized just how badly she missed her own kitchen when she
had to live in a guest-house for a few months. Got a kitchen of her own
again and then The Yum Factor was born! The new bride who wormed her way
into her hubby's grandmother's heart with a simple rasam, the
techie who gave up her career to play full time Mom. I had the pleasure
of meeting her recently. We chatted away nineteen to the dozen,
predictably food mostly, kids and life!

I had this recipe from my aunt who bakes a lot from her wonderful home in Cambridge I used Tunisian dates (any dates should work) in this and after the cake was baked, the dates were totally melting in the mouth. Soft, moist and a slight taste of the banana, it was a perfect tea time cake
The whole house had a lovely aroma once I got this in the oven. And I was all set to take the pictures - and by the time the cake was done, for my luck, it started pouring outside. It was about 5 in the evening and threatening to get all dark and gloomy outside. The pictures didn't turn out so great, but this was the perfect for the weather. Warm cake straight out of the oven for an evening tea, with thunder playing in the background.

Date and banana cake
What you need -
2 over ripe bananas
1/3 cup butter
2/3 cup sugar
2 eggs
1 cup APF / maida
1 tsp baking powder
1 tsp baking soda
2 tbsp hot milk
1/2 cup chopped dates
What you do with it - Pre heat the oven to 180 C. Sift the flour with the baking powder Mash the bananas and set aside Add the butter, sugar and eggs and mix well Add in the bananas and chopped dates Dissolve soda in milk and pour it over this mix Stir in the flour and mix with a spatula till it forms a smooth batter Pour into a greased loaf tin, muffin mould or cake pan Bake till golden brown, for about 45 mins
Allow it to cool for about 10 minutes and enjoy it warm
love Archana's blog and this cake looks perfect. in our house bananas always are over ripe and now I have ne more recipe to use them up.

ReplyDeleteI was searching for easy cake recipes to bake on my newly acquired convection microwave and stumbled upon this wonderful blog. This cake will be the first one I bake! Can you tell me if I need to bake it for the same time in the convection mode or do I change the time?
